THE WORLD'S LARGEST SAUERKRAUT PRODUCTION FACILITY BEGINS EXPANSION
Bear Creek, Wis.––Construction currently under way for an expansion to the
industry's leading Sauerkraut production facility is predicted to permanently
secure a Wisconsin-based company's title as the world's largest producer of
Sauerkraut.
The 32,000-square-foot expansion to Great Lakes Kraut Company's facility
in Bear Creek, Wis., will not only allow for more efficient processing of cabbage
this year, it will also revolutionize the industry through the use of new state-of-
the-art curing vats, and bring positive economic impact to Wisconsin.
The expansion includes the installation of 25 additional 900-ton stainless
steel curing vats prior to the peak kraut season this fall. "We are the only kraut
producer in the U.S. using stainless steel vats," says Great Lakes Kraut co-owner
Ryan Downs.
"These vats are innovative for Sauerkraut. They are more hygienic
and produce a finer quality kraut than the common cement and wooden vats."
The vats will be manufactured in Greenville, Wis., and all stages of the building's
construction have been contracted with Wisconsin firms. The benefits continue
once the expansion is completed because the facility will require 66,000 tons of
cabbage grown on an estimated 2,200 acres of Wisconsin farmland each year.
The cabbage will be processed by 55 full-time and more than 100 seasonal
laborers.
With the plant expansion, Great Lakes Kraut Company will produce more
Sauerkraut than the entire country of Germany for the second consecutive year.
"Germany may have a rich tradition with Sauerkraut," says Downs, "but we are
proud to say that our beautiful state of Wisconsin is now and will continue to be
the true home of Sauerkraut."
