TEXANS CELEBRATE OKTOBERFEST WITH SAUERKRAUT
BEAR CREEK, WIS.– As September draws to a close, people across the state of Texas are
hanging up their cowboy hats, donning their lederhosen, and preparing their favorite sauerkraut
dishes for the greatest of all German heritage celebrations, Oktoberfest. And with 17.5 percent
of the Texas population having German ancestors, it’s not surprising that the Lone Star State is
gearing up to enjoy sauerkraut this fall.
“Texans are huge fans of sauerkraut,” said Ryan Downs, co-owner of the Great Lakes Kraut

Oktoberfest celebration in Fredericksburg from September 30 to October 2, New Braunfels’
Wurstfest scheduled for November 4 to 13, and the various other German celebrations
throughout the state, we expect a peak in sauerkraut consumption over the next couple of
months.”
Downs explained that German dishes made with sausages and sauerkraut are the standard fare
during Oktoberfest, but many people are finding new ways to add the health benefits of this
cancer-fighting German favorite to contemporary dishes. Sauerkraut is becoming popular in
dishes like salads and pizza, and even in Texas favorites like salsa and chili.

Salsa Ole
Ingredients
• 1 can (15 oz.) black beans, drained and rinsed
• 1/2 cup packed Sliver Floss/Bush’s Best sauerkraut
• 1/3 cup fresh cilantro, chopped
• 1 can (4 oz.) green chilis, chopped
• 2 tbsp. lime juice
• 2 large tomatoes, seeded and chopped
• 1/4 cup green onions, finely chopped
• Tortilla chips
Drain, rinse, and chop sauerkraut. In medium mixing bowl, combine all ingredients, stirring well.
Cover and refrigerate at least 2 hours before serving. Serve with tortilla chips.
Makes 10 servings

Surprise Chili
Ingredients
• 1 tbsp. olive oil
• 1 lb. lean ground beef
• 1 1/2 cups chopped onion
• 2 cloves garlic
• 1 can (28 oz.) crushed tomatoes
• 1 can (14.4 oz.) Silver Floss/Bush’s Best sauerkraut
• 1 can (15 oz.) pinto beans
• 1 can (14 oz.) low-sodium beef broth
• 3 to 4 tbsp. chili powder
• 1/4 tsp. pepper
Heat oil in 3-quart saucepan. Brown meat, onions and garlic. Drain. Stir in remaining
ingredients. Bring to boil. Reduce heat to low. Simmer, partially covered, for 25 to 30 minutes.
Makes 4 to 6 servings
